 GODAMBU NURUKKU KHEER/ BROKEN WHEAT PAYASAM


 ingredients

broken wheat- 1/2 cup
water- 1 cup

salt- a pinch
jaggery- 2 

coconut milk
first milk- thick- 1/4 cup
second milk- thin- 1/2 cup

                    or

milk- 1 cup

cardamom crushed-3
raisins- 1 tablespoon
cashew nuts-5

ghee/ butter- 4-5 tablespoons


preparation

clean the broken wheat well

cook with water.  add a pinch salt
if you are using fresh coconut milk, cook it in second milk

meanwhile, dissolve jaggeries in little hot water

ad it when broken wheat is cooked
stirr well

when becomes thick add thick first coconut milk or cows milk

allow it to boil in low flame

add the cardamom powder

fry raisins and cashew nuts in ghee/ butter separately

pour it into the payasam

take a puttu maker




add coconut first. then flour.

grated coconut-1/2 cup
water-1/4cup
salt-

preparation

in a bowl, take roasted semolina / rava.  add salt
sprinkle water in small quantities  in the flour
mix well with both hands

dried red chillies- 4 
shallots-5 
salt
curry leaves- 1 sprig

water
oil- 2 tablespoons

preparation

cook red beans with salt and water in a pressure cooker well

crush shallots and dry red chillies well

take a kadai.  add oil.  fry crushed shallots and dried red chillies.  add curry leaves .  add the cooked red beans.  allow it to mix well

garlic - 1 clove
turmeric powder- a pinch

dried red chillies- 2

oil- 2 tablespoons

mustard seeds- 1 tablespoon

preparation

cook red beans with salt and water in a pressure cooker well

crush shallots, grated coconut, turmeric powder, garlic, cumin seeds  and dry red chillies coarsely

take a kadai.  add oil.  splutter mustard .  add curry leaves .  add the cooked red beans. add the crushed mixture. allow it to mix well

dried red beans- 1 cup
 raw banana - big

dried red chillies- 4 
shallots-5 
salt
curry leaves- 1 sprig

water
oil- 2 tablespoons

preparation

cook red beans  with salt and water in a pressure cooker well when it is three- fourth cooked add cut raw banana and again cook in a pressure cooker

crush shallots and dry red chillies well


take a kadai.  add oil.  fry crushed shallots and dried red chillies.  add curry leaves .  add the cooked red beans and raw banana.  allow it to mix well

ingredients

banana blossom- 1;  chopped into very fine pieces like cabbage

red chilly powder- 1/2 tablespoon
turmeric powder- 1/2 tablespoon

ginger- 1 inch piece
grated coconut- 1/2 cup

garlic - 1 clove

shallots-3 
green chilly - 1

coconut oil- 3 tablespoons

mustard-1
dried red chilly-2
black gram - 1 tablespoon
curry leaves- 1 sprig

salt

preparation

cook banana blossom with red chilly and turmeric powder and salt.


crush coconut, shallot , green chillies, 1 dried red chilly, ginger, garlic


heat oil.  add mustard, dried red chillies, blackgram and curry leaves.  add the crushed mixture and fry for 1 minute.  


add the cooked banana blossom

ingredients

wheat flour- 1 cup
warm water
salt

jaggery-1 or 2
grated coconut- 1/2 cup
water

preparation

dissolve jaggery in litttle water. strain it.

add grated coconut to this.  mix well
care should be taken in adding water.  the mixture should be thick

pour warm water into wheat flour and add salt.  mix well

press the dough with hand placing it in a plantain leaf or you can use aluminium foil
also you can use a frame

put the filling in one side
fold it

press the edges firmly

now steam it

ingredients

beetroot-1
fenugreek seeds- uluva- 1/2 tablespoon
asafoetida powder-1/2 tablespoon

red chilly powder- 1 tablespoon
turmeric powder-1/4 tablespoon

ginger-2 inch piece; cut
garlic- 5 cloves; crushed
green chillies- 5 cut
gingelly oil-4 tablespoon

salt
water-1/2 cup

mustard -1 tablespoon

vinegar-1/4 cup

preparation

cut the beetroot into small pieces

heat a kadai.  add oil. splutter mustard.

fry ginger-garlic and green chillies for 1 minute

add red chilly and turmeric powder,
also add asafoetida and fenu greek powder.

add water and cut beetroot pieces and salt
cook till  a thick consistency is reached

add vinegar


store in an air tight container

HOME MADE FRENCH FRIES



ingredients

potatoes-2
salt- as required
oil- 1 cup

preparation

peel the potatoes and wash it
slice it into long pieces in the shape of french fries

take 1/2 bowl water and add 1 tablespoon full salt.
put the potato pieces in it.
allow the potato pieces to become salty
keep aside for 2 hours

after 2 hours drain water from potatoes.  keep it for 1 hour so that the whole water goes off and potatoes become dry

when dried fry the potatoes in oil
fry well so that it becomes crispy

tips


if you want more spicy, mix it with chilly powder or pepper powder

HOME MADE TAHINI

HOME MADE TAHINI

ingredients

sesame seeds-2 cups
olive oil/ vegetable oil- 3/4 cup

preparation

preheat oven to 350.
toast sesame seeds for 5-10 minutes, do not make it brown.  cool for 20 minutes

pour sesame seeds into food processor and blend with oil for 2 minutes.


to get the desired texture you can add more oil

ingredients

for marinating chicken


chicken boneless- 500 g
yoghut-1 cup
vinegar- 1/4 cup

garlic-4 cloves crushed
pepper-1 tablespoon

salt- 1/2 tablespoon

cardamom crushed -2
all spice powder- 1 tablespoon

lemon juice-1

mix all the ingredients together and keep it in a refrigerator preferably overnight

fry chicken well in oil.


for the sauce

tahini- 1 cup
garlic -2 cloves; crushed
lemon juice-1/4 cup
yoghurt-2 tablespoons


mix all welll.
keep it aside


for filling bread

kuboos- 8

cucumber-1 sliced
onion-1 sliced
cabbage-1/4 cup ; sliced
tomato-1or 2 sliced
parsley- 1/2 cup sliced

sumac- 1 tablespoon(optional)

french fries- 2 cup

mix all well and keep it in a bowl


warm the kuboos

spread the sauce on it

put the fillings

roll it

and cover the bottom with aluminium foil without spilling

ingredients

chickpeas-1 cup
lemon juice from 1
tahini-2 tablespoons

garlic-2 cloves; crushed
salt-1/2 tablespoon

olive oil- 2 tablespoons

preparation


cook chickpeas.  drain it
collect 1/4th the drained liquid from chickpeas


mix all the ingredients in the grinder


make a shallow well in the middle and add olive oil in the center

ingredients


squid- clean and cut- 1/2 kg

onions-5
tomatoes-2
garlic-6 cloves
ginger-2 inch piece
green chillies-6
curry leaves-8

salt
red chilly powder-1/2 tablespoon
coriander powder-2 tablespoons
turmeric powder-1/4 tablespoon
all spices powder-1/4 tablespoon

water-2 cup

oil- 4 tablespoons

preparation

cut the squid and clean it well

you can put it in vinegar, turmeric powder and salt water for sometime

heat oil in a kadai
add onions and fry till brown colour
add ginger garlic paste and fry for 2 minutes

add sliced tomatoes and green chillies. fry for 1 minute

add curry leaves and salt

add all powders and fry till the raw small goes

add the cleaned squid and water

cook it well


tips

you can also prepare this by frying the squid

fry it using red chilly powder,turmeric powder and salt. add it to the masala and roast it. 

only 1/2 cup of water should be added then.
