HOME MADE FRENCH FRIES



ingredients

potatoes-2
salt- as required
oil- 1 cup

preparation

peel the potatoes and wash it
slice it into long pieces in the shape of french fries

take 1/2 bowl water and add 1 tablespoon full salt.
put the potato pieces in it.
allow the potato pieces to become salty
keep aside for 2 hours

after 2 hours drain water from potatoes.  keep it for 1 hour so that the whole water goes off and potatoes become dry

when dried fry the potatoes in oil
fry well so that it becomes crispy

tips


if you want more spicy, mix it with chilly powder or pepper powder

HOME MADE TAHINI

HOME MADE TAHINI

ingredients

sesame seeds-2 cups
olive oil/ vegetable oil- 3/4 cup

preparation

preheat oven to 350.
toast sesame seeds for 5-10 minutes, do not make it brown.  cool for 20 minutes

pour sesame seeds into food processor and blend with oil for 2 minutes.


to get the desired texture you can add more oil

ingredients

for marinating chicken


chicken boneless- 500 g
yoghut-1 cup
vinegar- 1/4 cup

garlic-4 cloves crushed
pepper-1 tablespoon

salt- 1/2 tablespoon

cardamom crushed -2
all spice powder- 1 tablespoon

lemon juice-1

mix all the ingredients together and keep it in a refrigerator preferably overnight

fry chicken well in oil.


for the sauce

tahini- 1 cup
garlic -2 cloves; crushed
lemon juice-1/4 cup
yoghurt-2 tablespoons


mix all welll.
keep it aside


for filling bread

kuboos- 8

cucumber-1 sliced
onion-1 sliced
cabbage-1/4 cup ; sliced
tomato-1or 2 sliced
parsley- 1/2 cup sliced

sumac- 1 tablespoon(optional)

french fries- 2 cup

mix all well and keep it in a bowl


warm the kuboos

spread the sauce on it

put the fillings

roll it

and cover the bottom with aluminium foil without spilling

ingredients

chickpeas-1 cup
lemon juice from 1
tahini-2 tablespoons

garlic-2 cloves; crushed
salt-1/2 tablespoon

olive oil- 2 tablespoons

preparation


cook chickpeas.  drain it
collect 1/4th the drained liquid from chickpeas


mix all the ingredients in the grinder


make a shallow well in the middle and add olive oil in the center

KOONTHAL/ SQUID ROAST

squid- clean and cut- 1/2 kg

onions-5
tomatoes-2
garlic-6 cloves
ginger-2 inch piece
green chillies-6
curry leaves-8

salt
red chilly powder-1/2 tablespoon
coriander powder-2 tablespoons
turmeric powder-1/4 tablespoon
all spices powder-1/4 tablespoon

water-2 cup

oil- 4 tablespoons

preparation

cut the squid and clean it well

you can put it in vinegar, turmeric powder and salt water for sometime

heat oil in a kadai
add onions and fry till brown colour
add ginger garlic paste and fry for 2 minutes

add sliced tomatoes and green chillies. fry for 1 minute

add curry leaves and salt

add all powders and fry till the raw small goes

add the cleaned squid and water

cook it well


tips

you can also prepare this by frying the squid

fry it using red chilly powder,turmeric powder and salt. add it to the masala and roast it. 

only 1/2 cup of water should be added then.

garlic-6 cloves
ginger-2 inch piece
green chillies-6
curry leaves-8

salt
red chilly powder-1/2 tablespoon
coriander powder-2 tablespoons
turmeric powder-1/4 tablespoon
all spices powder-1/4 tablespoon

water-1/2 cup

oil- 4 tablespoons

preparation

boil the eggs in water with a pinch salt


heat oil in a kadai
add onions and fry till brown colour
add ginger garlic paste and fry for 2 minutes

add sliced tomatoes and green chillies. fry for 1 minute

add curry leaves and salt

add all powders and fry till the raw small goes

add the boiled eggs and water

cook it well


tips

you can also prepare this without boiling the eggs
add water to the masala and beat the eggs in to it

let it be cooked

you can also add beaten mixture to the masala


also can add coconut milk to the curry

green peas- 1 cup

onions-2
tomatoes-2
garlic-6 cloves
ginger-2 inch piece
green chillies-6
curry leaves-8

salt
red chilly powder-1/4 tablespoon
coriander powder-1 tablespoons
turmeric powder- a pinch
all spices powder-1/4 tablespoon

water-1/2 cup

oil- 4 tablespoons

preparation

keep the green peas in water  overnight

cook the green peas well preferably in a pressure cooker

heat oil in a kadai
add onions and fry till golden brown colour
add ginger garlic paste and fry for 2 minutes

add sliced tomatoes and green chillies. fry for 1 minute

add curry leaves and salt

add all powders and fry till the raw small goes

add cooked green peas and water

cook it well

heat oil. you can splutter mustard and curry leaves

also can add coconut milk to the curry

cabbage- 1/2

green chillies-5, cut lengthwise
grated coconut-1/4 cup
onion-1, chopped
turmeric powder-1/4 tablespoon

mustard- 1 tablespoon
curry leaves-8
coconut oil- 2 tablespoons 

salt

preparation

cut cabbage into fine pieces.  
wash with water.  drain water well

mix cabbage with grated coconut, green chillies, chopped onion and 
salt and turmeric powder

heat oil in a kadai.  splutter mustard and curry leaves

add cabbage mix

cover with a lid


when cabbage is cooked remove from flame

french beans- 250 g

green chillies-5, cut lengthwise
grated coconut-1/4 cup
onion-1, chopped
turmeric powder-1/4 tablespoon

mustard- 1 tablespoon
curry leaves-8
coconut oil- 2 tablespoons 

salt

preparation

cut french beans into fine pieces.  
wash with water.  drain water well

mix beans with grated coconut, green chillies, chopped onion and 
salt and turmeric powder

heat oil in a kadai.  splutter mustard and curry leaves

add beans mix

cover with a lid

when beans is cooked remove from flame

EASY PALAPPAM

EASY PALAPPAM

ingredients

easy palappam powder-500 gm

sugar- 8 tablespoons
salt- 1/2 tablespoon

coconut-1 cup
water- to form a thin dough

preparation

mix all the ingredients in the blender/ mixie

keep it aside for 2 hours


take a appam chatti.  pour 1 tava dough
just round it to make a circle
close with a lid

take when cooked

ingredients

ripe banana -2
ghee- 4 tablespoons
sugar-4 tablespoons


preparation

cut banana into small pieces
add 2 tablespoons ghee in a hot kadai or pan.
fry the banana pieces in medium flame
fry both sides
serve with sugar sprinkled on roasted bananas

kadala/കടല - 1 cup

onions-2
tomatoes-2
garlic-6 cloves
ginger-2 inch piece
green chillies-6
curry leaves-8

salt
red chilly powder-1/4 tablespoon
coriander powder-1 tablespoons
turmeric powder- a pinch
all spices powder-1/4 tablespoon

water-1/2 cup

oil- 4 tablespoons

preparation

keep the kadala in water  overnight

cook the kadala well preferably in a pressure cooker

heat oil in a kadai
add onions and fry till golden brown colour
add ginger garlic paste and fry for 2 minutes

add sliced tomatoes and green chillies. fry for 1 minute

add curry leaves and salt

add all powders and fry till the raw small goes

add cooked kadala and water

cook it well

heat oil. you can splutter mustard and curry leaves

MAIDA PALADA/ POLA പോള

ingredients


maida/ all purpose flour- 1cup

egg- - 1
salt

water- to make a thick consisitency

preparation

mix all ingredients in a blender or mixie

take a pan
pour a tava of dough into pan and round it manually or using the tava

if you want you can fry both sides

serve with coconut milk and sugar
or curry 


GODAMBU / WHEAT KAIPATHIRI

GODAMBU / WHEAT KAIPATHIRI

ingredients

wheat flour- 1 cup
warm water
salt

sugar - 4 tablespoons
grated coconut- 1/2 cup
water

shallots- 4 cut into small pieces
cumin seeds- 1/2 tablespoon


preparation

pour warm water into wheat flour and add salt.  mix well

add grated coconut to this.  mix well
care should be taken in adding water.  the mixture should be thick

add shallots, crushed cumin seeds and sugar. mix well
roll into  balls (medium orange size)

press the dough with hand placing it in a plantain leaf or you can use aluminium foil



now fry both sides in a pan till crispy
